Sambal Goreng Udang Basa
shrimp in spicy sauce

250 gr large shrimps/prawns
1 lemongrass, crushed
1 red large chili pepper
50 ml fish stock
100 ml santen cair (thin coconut milk)
2 tbsp oil

1 red large chili pepper
2 shallots
6 cloves garlic
2 tsp asem / tamarind
1/2 tsp shrimp paste
1 cm laos (galangal)

Cara membuat:
Pound or grind the ingredients for the bumbu into a paste. Heat in a wok the oil and fry the shrimps golden brown and remove them from the wok. Fry the paste with the lemongrass for 3 minutes and add the stock and add the shrimps. Slice the chilipepper in small rings and add it with the santen. Let it simmer slowly until the coconut oil is released then serve.
