Ikan layur masak balado
red fried largehead hairtail

2 ikan layur (largehead hairtail / beltfish), otherwise mackerel
1/2 tsp lemon juice
1/2 tsp salt
1 salam leaf
1 lemongrass stalks
2 jeruk purut
1 tomato, chopped
1/2 tsp salt
1/2 tsp palmsugar
4 tbsp water
6 red chilies
4 red rawits
4 shallots
Cara membuat:
Cut the fish into pieces and marinate it with lemon juice and salt for 20 minutes. Heat oil in a pan and fry the fish nearly done. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan 2 tbsp oil and fry the paste with the salam, the lemongrass and the jeruk purut for 4 minutes. Add the tomato and cook for 2 minutes. Add the fish, salt and palm sugar and mix everything together. Pour in the water and cook until the liquid is absorbed.
