Lawar Ayam (Bali)
spiced chicken with coconut
Bahan-bahan:
ingredients:
150 gr chicken
150 gr grated coconut
1/2 bunch long/snake beans
4 jeruk purut leaves
6 red rawits
2 serai/sereh/lemon grass
5 cm jahe/ginger
5 cm lengkuas/laos/galangal
1 lime, juice
3 tbsp oil
water
Haluskan:
bumbu:
4 shallots
4 cloves of garlic
1 red lombok
5 cm kunyit
4 cm kencur
4 kemiri/candlenuts
1/2 tsp ketumbar
1/2 tsp terasi/trasi
1 tsp salt
1/2 tsp palm sugar

2 tbsp bawang goreng
Cara membuat:

Heat water in a pan and cook the chicken until done. Remove the meat from the pan and pull it apart / shred it. Cut the rawits into thin slices and the long beans into small pieces. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu together with the jahe, the serai, the lengkuas, the jeruk purut and the rawits for 5 minutes. Then add the coconut and chicken and mix well.
Then add the long beans and mix well. Then mix in the lemon juice. Sprinkle the bawang goreng on top and serve.
