Bahan-bahan:
ingredients:
1 duck
2 tbsp asemwater
100g kacang merah / aduki beans
250 ml santen asli (thick coconut milk)
750 ml santen cair (thin)
2 cm laos
2 lemongrass
1 kunyit leaf
2 asem kandis
3 tsp salt
200g grated coconut
Haluskan:
bumbu:
11 red chilies
11 shallots
5 tcloves garlic
2 cm jahe
4 kemiri/candle nuts
1 tsp pepper
2 tsp ketumbar
Cara membuat:
preparation:
Cut the duck into 4 pieces and rub it in with the asemwater and leave for 30 minutes. Rinse and pat dry. Roast the coconut dry in a pan and then mash it into a puree. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the santen cair with the bumbu, the laos, the lemon grass, the kunyit leaf, the asem kandis and salt and bring to the boil. Add the duck and let it simmer until the sauce thickens. Then add the beans with the santen asli and simmer gently until the liquid has evaporated.
