Pad Si-iew fried wide rice noodles ingredients pad siew sauce (marinade): 4 cm ginger 5 cloves garlic 1 tbsp tapioca starch 1 tbsp rice wine 1 tbsp nam pla (fish sauce) 1 tbsp oyster sauce 2 tbsp kecap manis (sweet dark soy sauce) 1 tbsp palmsugar 1 tsp sesame oil 1/2 green oinion 1 shallot ingredients: 300 gr beef 450 gr wide rice noodles 2 tbsp kecap manis (sweet dark soy sauce) 250 gr broccoli 2 tbsp nam pla (fish sauce) 1 tbsp palmsugar 1 tbsp oyster sauce 2 eggs 2 tbsp oil water garnish/side: 1/2 tsp black pepper prik dong (see recipe) Preperation/method: Pound the ingredients for the marinade into a paste. Cut the beef into thin slices and mix it with the marinade and let it rest for at leat 1 hour. Soak the noodles for 30 minutes in warm water and rinse it. Heat in pan the water and cook the noodles for 1 minutes and rinse it, the drain. Mix the noodles with the kecap. Heat in a wok the oil and add the meat with the marinade. Fry it until it starts to cook. Then add the noodles and the brocoli and fry it. Beat the eggs and add it to the middle of the wok. Wait until the eggs are nearly set and then mix in the remaining ingredients. Sprinkle the pepper on top of the dish and serve the prik dong next to it
