Soto Madura soup form Madura Bahan-bahan; ingredients: 500 gr beef 1400 ml water 4 kemini nuts (candlenuts) 4 shallots 3 cloves garlic 1/2 tsp white pepper 1 cm kunyit (turmeric) 2 cm ginger 2 lemon grass 2 tbsp rice salt to taste Taburan: garnish: 2 eggs lime slices Cara membuat: preperation/method: Cut the beef in pieces. Pound or grind the candlenuts, the shallots, the garlic, the kunyit, the ginger, the salt and the pepper into a paste. Mix the rice with 5 tbsp water and let it soak for 10 minutes. Pound or grind the rice then into a paste. Heat in a wok/pan the water and mix in both pastes and add the beef, a lime slice and the lemon grass and let it simmer for 1 1/2 - 2 hours until the meat is tender. Laddle the soup into bowls and garnish it with lime slices and slices egg
