Otak Otak Tenggiri fishcakes with spicy peanutsauce Bahan-bahan: ingredients: 250 gr tenggiri (mackerel) 100 gr tapioca or sago flour 1/2 tsp salt 1 tsp pepper 1 tsp palmsugar 100 ml santen asli (thick coconut milk) 1 egg (white only) 10 sprigs chives banana leaves Bahan-bahan saus: ingredients sauce: 50 gr kemiri nuts (candlenuts) 25 gr roasted peanuts 2 red lomboks 5 red rawits 125 ml water 1/2 tsp salt 1 tsp palmsugar 1 tsp asem (tamarind) Cara membuat: preperation/method; Slice the chives fine. Pound or grind the tenggiri fine and mix it with the flour, the salt, the pepper, the palmsugar, the egg, the chives and the santen into a even mixture. Put two tbsp on a piece of banana leaf and fold it like a parcel. Roast the parcels slowly on a charcoalfire until done. Serve it with the peanutsauce. Cara membuat saus; preperation sauce: Pound or grind the kemiri, the peanuts, the lombok and the rawits into a paste. Mix the with the remainig ingredients into a sauce.
