Sisig Cold marinated roasted pig meats
Ingredients: 750 gr pig cheeks 250 gr pig tongue 250 gr pig heart 250 gr liver 500 ml water 250 ml pineapple juice 1 tsp pepper sate skewers 1 egg
marinade: 2 onions 4 rawits 4 tbsp vinager 4 tbsp lime juice 4 tbsp pineapple juice 2 cm ginger 2 cloves garlic 1 tsp pepper 1 salam leaf 1 tsp salt
preparation/method: Heat in a pan the water and add all the meat, the pineapple juice and the pepper and let it slowly cook for 1 hour, the drain. Cut the meats into pieces and put it on the skewers. Roast the meat slowly above a charcoalfire until golden brown and crisp. Slice the onions, the garlic and the rawits fine. Grate the ginger. Mix the ingredients for the marinade and mix in the meat. Let it stand for 2,5 hours and put a soft fried egg on top before serving.
